My gelding used to sweat alot, all you can really do is keep him on a regular schedule, and the more conditioned he is the less he will sweat. :) Try and keep doing the same things over and over again until he realizes there is nothing to be nervous about.
I Agree with Ashley. Also make sure you are not nervous about something, because than he will get more worked up and look for something to be nervous about... (You probably already know that)
